pH is a commonly utilized test for many raw materials and finished products. It is defined as the negative log of the hydrogen ion concentration. The specification for some raw materials as well as finished products is critical. The pH can affect parameters such as product stability, taste, degradation and even color. This is sometimes overlooked and that is why the use of a properly calibrated pH meter using reference buffer solutions is so important.
